Contemporary American fusion. At Severo we are focused on presenting authentic and thoughtful cuisine. Rio Severo is the name given to this area by Father Escalante in the 1700s when he entered this valley and was met by scorching heat, treacherous rapids, and fierce Native tribes. We honor our pioneer heritage by using fresh, locally sourced ingredients as much as possible. We also lean on the knowledge and experience of our two well traveled chefs. At Severo you will find American comfort food, traditional Spanish and Latin dishes, French classics, and Asian inspired creations. Severo embodies the melting pot that is the American West in a style that we have deemed modern frontier dining.
